Popcorn Meal & Popcorn Flour Recipes

We at Amish Country Popcorn have now ground some of our popcorn into flour and meal. Here is an alternative for those who would rather not use wheat and an experiment for the adventurous.

We have tried some of the recipes listed. Over the years, we have been told that popcorn made the best corn meal. We have tried it, and we agree. Here are a few recipes you can try.




Popcorn Meal Recipes


Popcorn Meal Pancakes
4 Tbsp. butter
2 tsp baking powder
2 c. popcorn meal
½ tsp salt
2 Tbsp. sugar
1½ to 1¾ c. milk
3 eggs
¼ tsp cinnamon (optional)
1½ c. blueberries (optional)

Pour melted butter into a bowl and leave to cool slightly. Mix dry ingredients in a bowl. In another bowl, mix the other ingredients. Add to dry ingredients and stir to combine. Stir in blueberries. Heat skillet over medium heat. Cook the pancakes 3-4 min. on both sides.


Corn Meal Mush
2 Tbsp. flour
8 c. water
2 c. popcorn meal
salt to taste

Bring 6 cups of water to boil. In a bowl, mix the popcorn meal, flour, and rest of the water. When the water boils, put mixture in and cook for ½ hour. Place in pan and cut in slices and roll in flour. Fry in grease ‘till golden brown.


Corn Bread
¾ c. popcorn meal
½ c. flour
½ tsp. salt
2 tsp baking powder
1/3 c. sugar
½ c. Shortning
1 egg
½ c. milk

Mix all ingredients well in order given. Bake at 350 degrees for 15 minutes.

Popcorn Flour Recipes


Chewy Oatmeal Cookies
1 c. shortening
2 Tbsp. milk
1 c. brown sugar
1 tsp. baking powder
1 c. white sugar
1 tsp. baking soda
2 eggs
1 tsp. salt
2 tsp. vanilla
2 c. popcorn flour
2 c. rolled oats

Cream shortening. Add sugars & blend. Mix in eggs, add vanilla, milk, baking powder, soda, & salt. Blend well. Stir in corn flour and rolled oats. Bake on greased cookie sheets at 350 degrees for 10-12 minutes.


Peach Cobbler
1 stick butter
1 tsp. baking powder
¼ tsp. salt
½ c. sugar
½ tsp. vanilla
½ c. milk
1 large can of peaches (cut in chunks)
1 c. popcorn flour

Cream butter & sugar; add milk, popcorn flour, baking powder, salt and vanilla. Put peaches in 8x8 in. greased pan. Add batter on top of peaches. Pour ½ c peach juice. Bake 350 degrees for 1 hour.


Peanut Butter Cookies
1c. shortening
3 eggs
1 c. peanut butter
2 tsp. vanilla
1 c. granulated sugar
2½ c. popcorn flour
1 c. brown sugar
1½ tsp. soda
1 tsp. baking powder
½ tsp. salt

Cream shortening, sugars, and peanut butter. Add eggs & vanilla. Mix dry ingredients and blend into creamy mixture. Bake at 375 degrees for 7-9 min. Remove from oven & let set for 1 min. Remove.


Italian Chicken

2 c. Popcorn Flour
1 Tbsp seasoning salt
½ tsp onion powder
1 tsp chicken seasoning
1 tsp lemon pepper seasoning
1 bottle of Italian dressing
5 boneless skinless chicken 2 Tbsp of butter

Mix the first five (5) ingredients together in a zip-loc bag. In a seperate bowl, dip the chicken in the Italian dressing. Then roll in flour mixture. Melt butter in skillet. Fry chicken in skillet until golden brown.
